Tofu Salad

Tofu Salad
(Gluten Free, Vegan)

Many non-vegetarians steer well clear of tofu, even some veggies I know don’t eat unless someone else prepares it for them. This is an ultra easy, mega delicious way to have tofu and be ridiculously health conscious at the same time.

What you’ll need:
– 1/4 of a brick of firm tofu (Liberty brands herbed tofu is awesome for this salad)
– Cut tofu into thin rectangular pieces
– Place the pieces in a frying pan on medium heat and cover with your favourite salad dressing
– Mix up salad greens, peppers, cucumbers, carrots, celery etc. while tofu is cooking
– Flip tofu after about 5 minutes (it should be somewhat crispy)
– Continue cooking for another 5 minutes until both sides are crispy throw on top of your salad and you’re ready for your scrumptious meal vegans, vegetarians and even tofu haters will like

The Ultimate Salad: filling and fantastic!
(Gluten Free, Vegan)
–    1 can of mixed beans
–    1 cup cooked brown rice
–    Lots of mixed veg. Anything you like
–    Small hand full of almonds, walnuts, or other healthy nut of your choice

Mix up veggies in a bowl and throw a cup of rice and a cup of the mixed beans on top.  Great for lunches on the go.  Top with your favourite salad dressing.

–    Put extra beans in a container, they’ll keep in the fridge for about a week.
–    Cook up lots of rice and throw it in a container as well.  It’ll keep around a week also, and you can use it in other recipes.


–    two ripe avocados
–    ½  a tomato chopped
–    1 minced clove of garlic
–    1 jalapeno, chopped
–    1 squirt of hot sauce
–    a pinch of cilantro (I’m not a huge fan of the herb so I only throw in a pinch, but you’re welcome to pile in as much as suits your fancy!)

Mash up the avocado with a fork.  Then mix in the remainder of the ingredients.  If you’re lucky enough to be a Magic Bullet owner just throw it all in and blend, if not mix it with your fork!  Use some delicious gluten free chips for a vegan, gluten-free snack anyone will enjoy.

Super Healthy, Super Easy Veggie Soup

Super Healthy, Super Easy Veggie Soup

–    1/2 cup of V8 or other veggie cocktail
–    1/2 a brick of med-firm tofu (unpressed)
–    1/2 a cup fat-free skim milk
–    Lettuce (yes lettuce, any kind you have)
–    Any other assorted veggies you’d like or have hanging out in your fridge.
–    (Broccoli, carrots, corn, peppers, peas … you get the idea)

Throw all of the ingredients into a blender.  Mix, add a little seasoning/salt.  Microwave or heat in a saucepan.

Vegan Mac and Cheese (gluten free)

2 cups rice pasta shells
2 tbsp vegan margarine
½ cup vegan cream cheese
2 tsp of gluten free all-purpose flour
1/8th cup rice or soy milk
1 cup grated mozzarella
½ apple chopped into small pieces


Boil water and begin to cook rice pasta.  Preheat oven to 425 degrees. Should take about 7 to 10 minutes.  In a second pan on med-low heat melt margarine.  Once melted whisk in each tablespoon of flour separately.  Add milk and whisk.  Next add cream cheese, stirring with wooden spoon until it has melted into a thick cream sauce.  Add ½ a cup of grated vegan mozza stir in until melted.
Drain pasta and rinse with fresh water.  Add pasta to sauce pot and stir adding apples.  Put mixture into casserole dish cover with the second ½ cup of mozza and bake for approximately 15 minutes or until cheese starts to melt.
