The Ultimate Salad: filling and fantastic!
(Gluten Free, Vegan)
–    1 can of mixed beans
–    1 cup cooked brown rice
–    Lots of mixed veg. Anything you like
–    Small hand full of almonds, walnuts, or other healthy nut of your choice

Mix up veggies in a bowl and throw a cup of rice and a cup of the mixed beans on top.  Great for lunches on the go.  Top with your favourite salad dressing.

Tips:
–    Put extra beans in a container, they’ll keep in the fridge for about a week.
–    Cook up lots of rice and throw it in a container as well.  It’ll keep around a week also, and you can use it in other recipes.
