Vegan Mac and Cheese (gluten free)

Ingredients:
2 cups rice pasta shells
2 tbsp vegan margarine
½ cup vegan cream cheese
2 tsp of gluten free all-purpose flour
1/8th cup rice or soy milk
1 cup grated mozzarella
½ apple chopped into small pieces

Instructions:

Boil water and begin to cook rice pasta.  Preheat oven to 425 degrees. Should take about 7 to 10 minutes.  In a second pan on med-low heat melt margarine.  Once melted whisk in each tablespoon of flour separately.  Add milk and whisk.  Next add cream cheese, stirring with wooden spoon until it has melted into a thick cream sauce.  Add ½ a cup of grated vegan mozza stir in until melted.
Drain pasta and rinse with fresh water.  Add pasta to sauce pot and stir adding apples.  Put mixture into casserole dish cover with the second ½ cup of mozza and bake for approximately 15 minutes or until cheese starts to melt.
